May I join with other readers in congratulating The Globe on its fascinating and necessary series on salt? Some facts prompted me to read food labels more closely, but in particular the Canadian Stroke Network's recommendation that the preserving amount of sodium should not exceed 400 milligrams per serving ( The Taste Of Things To Come - Life, June 23). I appreciate that the definition of "serving" may be somewhat elastic, but a glance at a purchased jar of Thai pickled ginger in my kitchen cabinets more than alarmed me. The amount of sodium per serving (defined as one tablespoon or 15 grams) is listed as a whopping 1,210 mg, more than three times the Canadian Stroke Network's upper limit and more than 90 per cent of the recommended daily intake for an adult in my age bracket.

Even half a serving, an amount I might use in an otherwise healthy stir fry, is alarming.
