  • Cooking time: 10 to 15 minutes
  • Ready time: 55 minutes, includes 30 minutes cooling time
  • Servings: 1 ½ cups

2 cups of blueberries

½ cup water

½ cup sugar

1 tbsp lime juice

In a medium saucepan, combine water and lime juice.

Bring to a simmer, add half the blueberries and cook on low heat until they just start to break down, approximately 4 to 5 minutes.

Add the sugar and continue cooking until the sugar has dissolved and the mix has thickened slightly.

Add the remaining blueberries, and gently swirl them around in the saucepan until they are coated with the liquid and they just turn a bright blue-purple colour, approximately 1 minute.

Immediately remove from the heat and transfer to a baking sheet to cool; to cool the compote down more quickly, transfer to a large bowl, and place over an ice bath.
