Ingredients

4 tablespoons of melted butter

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

Pinch of cinnamon

2 egg whites

1/2 cup sugar

1/2 cup of flour, divided

Melted chocolate and chopped peanuts (for dipping)

Method

Preheat oven to 375. Grease 2 9-X-13 inch baking sheets.

Stir together 4 tablespoons of melted butter, 1/2 teaspoon vanilla extract, 1/2 teaspoon almond extract and a pinch of cinnamon. Set aside.

In a medium bowl, lightly beat 2 egg whites, 1/2 cup sugar. add 1/4 cup of flour, and beat just until combined. Switch to a spatula and gently fold in the butter mixture. Add another 1/4 cup flour and fold just until combined.

Drop 1 tablespoon of the batter onto the baking sheet and use the back of a spoon to spread the batter.

Bake for 6 to 8 minutes, until the fortune cookies just barely begin to brown around the edges.

Place a fortune in the middle of each cookie. Fold the cookie in half, then gently pull the edges downward over the rim of a glass.

Since the cookies will stay flexible as long as they are warm make small batches to make the process easier.

For an added touch - dip half of each fortune cookie in melted chocolate. You can sprinkle with chopped peanuts or candied sprinkles.
