impress your guests

Got unexpected overnight guests but not much in the way to serve for breakfast? Try one of my favourite easy-to-throw-together morning dishes - the breakfast pizza - and make a big splash. Kids especially will love it.

The dish was actually created by accident one morning as my wife and I scrambled to put together some semblance of a breakfast with limited ingredients, but it does bring together traditional Canadian breakfast favourites with the country's most popular takeout food: pizza. All you need is some store-bought pre-baked pizza dough from the freezer and cheese, eggs and maybe some bacon from the fridge.

If you want to throw on bacon slices, fry them in advance and put aside, then brush the pizza dough - I like the PC Blue Menu Whole Grain Pizza Kit, which includes tomato sauce - lightly with olive oil, top with a small amount of tomato sauce and bake according to product directions for 3 or 4 minutes. Remove the dough from the oven and top with cooked bacon, shredded cheese and an egg cracked directly onto the pizza. Reinsert into the oven and bake until the sunny-side-up egg is fully cooked. Remove and add salt and pepper to taste and serve.

Of course, you can add whatever else you may have in the pantry or fridge, from sardines to salami. Just make sure that they're to your guests' liking.
