If you want to serve these with a sauce, remove apples to a platter after baking and transfer pomegranate juice to a small pot, bring to a boil and reduce until slightly thickened.

Ingredients

4 apples, honeycrisp, gala or Pink Ladies

3 tbsp dried cranberries

¼ tsp ground cinnamon

¼ tsp grated nutmeg

1 tbsp brown sugar

1 cup pomegranate juice

3 whole star anise

Garnish:

Pomegranate seeds (optional)

Method

Preheat oven to 350 F.

Core apples and place in a baking dish. Combine cranberries, cinnamon, nutmeg and sugar. Stuff into apples. Pour over pomegranate juice and scatter around star anise.

Bake for 45 to 60 minutes or until apples are very tender. Serve with a little sauce if using and scatter some pomegranate seeds around.
