Adjust the heat when cooking the bannock so they cook evenly all the way through (you may have to lower it slightly). You can adjust the size as needed.

Servings: 8 to 12 bannocks

Ready Time: 30 minutes

Ingredients

Vegetable oil

4 cups unbleached flour

3 tbsp baking powder

4 tbsp sugar

2 tsp salt

2 to 3 cups cold water as needed

Method

Heat enough vegetable oil to reach 1/4-inch depth in a frying pan over medium heat.

Sift together dry ingredients. Stir in enough water to form sticky dough.

Ladle a scant cup of bannock dough into the hot oil in round circles about 4 inches wide. Fry patties until golden brown on each side and puffed up, about 2 to 3 minutes per side.

Remove to a rack and repeat with remaining dough.
