The feta and olives in these burgers give them a great Mediterranean flavour.
Try serving them as a large burger or smaller mini-burgers in a pita as you would a falafel. Add shredded lettuce, chopped tomato and a tzatziki sauce. The mixture also makes a great meatloaf. Bake for about 45 minutes at 350 F.
1 cup well-packed fresh spinach
¼ cup finely crumbled feta
¼ cup finely chopped green onions
1 teaspoon chopped garlic
2 tablespoons chopped oregano
½ teaspoon grated lemon rind
1 tablespoon finely chopped green olives
500 grams ground chicken
Salt and freshly ground pepper
Wilt spinach in microwave or in a skillet. Squeeze out any moisture and chop (it should come to about ¼ cup).
Combine spinach, feta, green onions, garlic, oregano, lemon rind and olives in a bowl. Add ground chicken and use your hands or a spatula to gently incorporate without over-mixing. Season well with salt and pepper.
Divide evenly into 4 portions (or 8 for mini-burgers, 2 per pita) and shape into 1-inch thick patties.
Grill patties on high heat with the lid closed for 4 minutes per side or until juices run clear.
