Warren Long, the mixologist at Manoir Hovey in the Eastern Townships, has created a new summer cocktail with a distinct Quebec flavour. Among the ingredients are local apple juice and Ungava gin, which is infused with botanicals harvested from the Ungava Peninsula, the northernmost point of the province. A tangy drink with a sophisticated air, the Powel is named after a distinguished American family who vacationed at the property when it was a cottage owned by Atlanta businessman Henry Atkinson, who preferred vacationing in Canada to New England. Built in 1900, the estate is now a vacation destination for travellers from around the world. Before making the cocktail, prepare the cherry-infused alcohol in advance by filling a mason jar with fresh cherries and topping it maraschino liqueur or a neutral spirit such as vodka and let it sit for a month.

Ingredients

1 ounce Ungava gin

1/2 ounce cherry-infused alcohol

1/2 ounce Canadian Club whisky

1/2 ounce fresh lime juice

2 ounces apple juice, preferably from Quebec

Method

To mix, pour the ingredients in a shaker filled with ice, shake and strain into an ice-filled highball glass. Garnish with a cherry and an apple twist.
