Dinner tonight: Vegetable sides that deserve centre stage

It's very trendy right now for restaurants to serve an array of interesting sides with the main course, meant to be shared by everyone at the table. It provides an excellent opportunity for chefs to be more creative with vegetables and gives vegetarians options. They are so good, I often make a meal out of the sides.

Here are three excellent side dishes to use for easy entertaining. Serve one or all three, along with grilled flank steak or chicken breasts for a tasty, simple meal. Increase the meat and serve as a buffet. Both the eggplant and the beet salad make excellent appetizers as does the corn salsa atop a crostini.
