How to make hummus

Hummus is a dip or spread made from chickpeas blended with tahini, olive oil, lemon juice, garlic and salt. Tahini is a paste made from ground sesame seeds.

Ingredients

1 19-ounce can chickpeas, drained and rinsed

1 tbsp fresh lemon juice

2 tbsp tahini

1-2 garlic cloves, peeled

½ tsp salt

pinch pepper

5-6 tbsp olive or sesame oil (as needed)

mint or cilanto for garnish

Method

Combine all ingredients in a food processor or a blender. (For a coarser texture, use a mortar and pestle.)

If it is still a bit thick for your liking, thin it with a bit of water.

You can take this basic recipe and add to it with roasted red peppers, olives or other spices. I like to add some fresh herbs and a chili pepper.
