3 tbsp (50 mL) extra virgin olive oil

1 clove garlic, coarsely chopped

3 large sprigs fresh basil

4 Greek-style soft pitas

6 oz - 8 oz (175 - 250 g) Friulano cheese, grated

3 oz (75 g) prosciutto

4 plum tomatoes, sliced

Black pepper, freshly ground


Preheat oven to 400 F (200 C).

In food processor, combine oil, garlic and basil until smooth. Brush liberally over pitas.

Sprinkle with grated cheese. Tear prosciutto into bits and place on top of cheese. Place several slices of tomatoes on top. Sprinkle with pepper.

Place on a sheet of aluminum foil and bake on middle rack of oven about 8 minutes or until cheese melts and pitas are golden.

Cut into triangles and serve warm.
