Method

Pre-heat oven broiler or set oven to 500 degrees.

Wash and dry peppers.

Cut peppers in half and discard stem and seeds.

Place peppers in a roasting pan or on a tray lined with foil and place in the oven with the rack fairly high up.

Broil 8 to 10 minutes — until peppers are soft, blackened and/or blistering.

Remove peppers from oven and place in a bowl. Cover in plastic wrap and allow to cool for about 15 minutes. This will steam the peppers.

Once peppers have cooled, peel them using a paring knife.
