Roasted Halibut Add to ...

This method of flash roasting works for any fish – just adjust the timing according to the thickness.

  • Ready time: 45 minutes, including marinating
  • Servings: 4


4 6oz (175g) halibut fillets with skin


2 tbsp light miso

2 tsp Dijon mustard

2 tbsp chopped basil

2 tbsp chopped mint

3 tbsp vegetable oil


Combine marinade ingredients in a medium bowl. Spread onto fish. Leave for 30 minutes.

Preheat oven to 450 F.

Brush a metal pan with oil. Add fillets. Bake for 8 to 10 minutes or until opaque. You will see a few little white dots of juice on the side.
