The Hound Dog plays down the potentially dangerous tequila by balancing the earthy agave syrup with bittersweet orange Aperol.
Method
Shake one ounce Aperol, one ounce Don Julio Blanco tequila (or other crisp white tequila), two ounces fresh ruby red grapefruit and a half-ounce fresh lime juice together with ice.
Rim tall Collins glass with salt and fill with fresh ice.
Strain drink into glass, top with soda water and garnish with two lime wheels.
