Already a well-established margarita alternative for those in the know, Paloma's stock keeps rising alongside the enduring jacked-up price of limes.

Although originally made with slightly trashy grapefruit-flavoured soda, the drink was reclaimed with fresh, sweet grapefruit juice a decade or so ago, making it over into a fashionable crafty Tex-Mex staple.

The Hound Dog plays down the potentially dangerous tequila by balancing the earthy agave syrup with bittersweet orange Aperol.

Method

Shake one ounce Aperol, one ounce Don Julio Blanco tequila (or other crisp white tequila), two ounces fresh ruby red grapefruit and a half-ounce fresh lime juice together with ice.

Rim tall Collins glass with salt and fill with fresh ice.

Strain drink into glass, top with soda water and garnish with two lime wheels.
