Spiced nuts make a great hostess gift.

These two varieties of nuts are great to have on hand for entertaining or to give as hostess gifts.

Servings: Makes 2 cups

Salted nuts

1 cup pecans, unsalted

1 cup blanched almonds

2 tablespoons melted butter

1 teaspoon salt

Sweet and spicy nuts

1/2 cup cashews, unsalted

1 cup pecans, unsalted

1/2 cup almonds, unsalted

1 egg white

1/4 cup white sugar

1/2 teaspoon cinnamon

1/4 teaspoon smoked paprika

1/2 teaspoon salt (optional)

Method

Salted nuts

Preheat the oven to 300 F.

Toss the nuts and the butter in a bowl and spread out on a cookie sheet lined with parchment.

Bake for 20 to 30 minutes (until they are golden) shaking the pan from time to time to get an even roasting. Remove from oven. Salt well.

Put the nuts into a paper bag and shake. This distributes the salt and absorbs excess butter. Then allow to cool. Store in an airtight container.

Sweet and spicy nuts

Preheat the oven to 325 F.

In a large bowl beat egg white with a fork until frothy. Stir in the nuts and mix until well coated.

Stir in spices and salt and toss until all the spices are well distributed.

Put onto a parchment lined baking sheet and spread out evenly.

Bake for about 25 minutes, and stir the mixture a couple of times. The sugar will melt and get gooey but should be starting to dry up by the time the nuts are done. Revmove from oven. Separate the nuts and cool (the nuts will become crunchy when fully cooled).

Store in an airtight container.
