Grasping desperately at the last days of summer? Reach out for the last of the season’s peaches and turn the sweet, juicy fruit into a savoury, smoky appetizer or salad topping with a simple wrap in pancetta and a drizzle of balsamic. You can even grill them on the barbecue to keep the lazy vibe of summer evenings going strong – just don’t forget to bring a sweater out with you.

Method

Slice your peach into 6 - 8 pieces (bite-sized). Sit one wedge on the edge of a slice of pancetta (fold the pancetta in half before rolling to keep some of the peach tips poking out). Top with a grind of pepper.

Roll the peach in the pancetta. Heat a pan with olive oil on the stove to high and add the pancetta-wrapped peaches. Flip once first side is browning. Do in two batches if needed to give the peaches enough room.

Serve warm as an appetizer drizzled with balsamic or use to top a salad of arugula or spinach.
