As the name implies, once it's brewed, it's put in a barrel that formerly contained U.S. whisky, specifically from Tennessee (let me guess: Jack Daniel's?). There it matures for 120 days, enough time for interesting alchemy. Chestnut-brown in colour and slightly hazy, it starts out with a pop of cherry flavour, following through with roasted nuts, caramel, candied orange and a whisper of corn likker. It's rounded, with modest carbonation and fresh acidity, and the 7.4-per-cent alcohol hides well. Think of it as a whisky-and-beer-chaser in one. And think of it as a great step forward in Canada's craft-brewing culture. Brewed just once a year in limited quantity, it's available only at the Oakville, Ont., brewery, cameronsbrewing.com.
