This is my kind of New World rosé, bone-dry and grown-up, with not the least suggestion of sweet kiddie juice. The nose as well as the palate come across with an uncommon and very welcome earthy note (soil? coffee?) and there’s a hint of mineral on the refreshing finish. Try it with delicate fish dishes. Available from the winery (haywirewinery.com).
