Dan Sullivan, the very talented force behind the crush pad and fermenter at Rosehall Run in Prince Edward County, proves with this wine that he's a superb blender in the cellar, too. The "certain ratio" refers to the final grape mix, established after Sullivan sampled many combinations from barrels maturing at the winery. The cabernet sauvignon and merlot (45 per cent and 34 per cent, respectively) came from vineyards in Niagara while the cabernet franc (21 per cent) was grown at the Rosehall Run estate in Eastern Ontario. From a good growing season in Ontario, this succulent red delivers flavours of wild berries, vanilla and a hint of forest underbrush for some savoury zip. The tannins are fine-grained and elegant.
