Sauvignon blanc from the chardonnay paradise of Burgundy – it's an underappreciated pleasure. William Fèvre, of Chablis fame, crafts this treasure with Burgundian precision, dishing up more heft than the more celebrated sauvignon blancs of Sancerre and Pouilly-Fumé in the Loire Valley to the west, yet still with the vibrant zing characteristic of the grape. Try it with chicken picatta (flattened, seared, boneless breasts with lemon, capers and parsley); $21.80 in Quebec.
