Lobster DipKevin Van Paassen/The Globe and Mail

Ingredients

1 tin (11.3 ounces/320 g) lobster meat

3/4 cup mayonnaise

1 teaspoon cayenne pepper

Method

Drain the lobster in a sieve, pressing down on it to remove as much liquid as possible.

Transfer to a bowl and break it up, chopping any large pieces.

Stir through the mayonnaise and cayenne pepper with a fork.

Serve in an attractive bowl with crackers.
