MULLED WINE
Ingredients
2 bottles hearty red wine
2 teaspoons ground nutmeg
2 teaspoons ground cinnamon or 2 cinnamon sticks
25 cloves
Pinch ground cardamom or five crushed cardamom pods
1 cup brown sugar (or according to taste)
½ cup orange juice
Method
Pour wine into a large saucepan or small stock pot and place over medium-high heat until steam starts to rise from the liquid. Immediately turn heat down to the lowest setting. Add all ingredients and simmer for 20 to 25 minutes, stirring occasionally to dissolve the sugar. Ladle the mixture through a fine strainer into mugs. Garnish with fresh or dried berries or a slice of orange or lemon (optional).

Ingredients
2 bottles hearty red wine
2 pinches ground cardamom or 10 crushed cardamom pods
1 teaspoon ground cinnamon or 1 cinnamon stick
½ cup to 1 cup brown sugar
Peel of 1 whole orange
½ cup raisins
½ cup sliced blanched almonds
10 cloves
1 cup akvavit, vodka or brandy
Method
Place all ingredients in a stainless-steel container or pot, cover and let stand at room temperature overnight or for up to 24 hours. Gently warm the mixture over low heat until steam begins to rise from the surface of the liquid. Add the sugar and stir to dissolve. Add the akvavit, vodka or brandy, ladle over a strainer into mugs and garnish with a sprinkling of raisins and almonds.
