A tip: Line cookie sheets with parchment paper rather than smearing on butter and flouring the cookies. Parchment is a reusable non-stick paper that's available at kitchen shops and some supermarkets. Because parchment eliminates the need to grease the cookie sheet, it gives you a cookie with less fat.
The sweetness of the chocolate is mellowed by the slight saltiness of the noodles. You can substitute any nut for cashews; peanuts are a good choice.
12 oz. white chocolate
1½ cups cashews
2 cups chow-mein noodles or pretzel sticks
Melt chocolate in a large, heavy pot on low heat, stirring frequently. Remove from heat and gently stir in cashews and chow-mein noodles.
Drop a heaping tablespoon onto wax-paper-lined cookie sheets so each cookie mounds and resembles a little drift of snow. Refrigerate until needed.
