French toast, a perennial favourite, is a wonderful treat for children to prepare on Mother's Day - or any time of year, really.

Offering a delectable combination of sweet and savoury, this apple cheddar stuffed French toast is a decadent dish that can be cooked up by the kids (under adult supervision, of course).

If desired, substitute ham or turkey bacon for the bacon.

Ingredients

3 eggs

1/4 cup skim or 2 per cent milk

1/4 teaspoon pure vanilla extract

1 apple, cored

Pinch of cinnamon

8 slices multigrain bread

4 ounces old white cheddar, sliced or grated

4 slices bacon, cooked and chopped

Maple syrup

Method

In a shallow bowl, whisk together eggs, milk and vanilla. Set aside.

Thinly slice apple and place in a bowl. Toss with cinnamon and set aside.

Heat a non-stick pan over medium heat and lightly spray with cooking oil. Dip 1 slice of bread into egg mixture and place on hot pan. Top with 1/4 of the apple slices and 1/4 of the cheddar. Top with another slice of bread dipped in egg mixture. Cook until golden brown and the cheese is completely melted, 3 to 4 minutes on each side.

Repeat method for remaining 3 French toast sandwiches.

If desired, keep warm in a 200 F oven until ready to eat.

Serve with bacon bits and maple syrup.
