Chef David Lee at Nota Bene in Toronto.Tim Fraser/The Globe and Mail

Chef David Lee is co-owner of Nota Bene on Queen Street West in Toronto. Previously, he was chef and co-owner of Toronto fine-dining restaurant Splendido, which he and partner Yannick Bigourdan sold in 2009, a year after opening the more accessible Nota Bene.

Nota Bene's continuing popularity with foodies and fashionistas alike has turned Lee into a local celebrity. He's the chef other chefs want to learn from.

And no wonder. Food is in his blood. He's the third generation of chefs in the Lee family. He was born in England but two grandfathers hail from Beijing. He has hunted fruit bats in Mauritius and game birds in Sandringham, England. He kills what he cooks and what he cooks is killer.
