A local fish makes good

Special to The Globe and Mail

Much as I love smoked salmon, I've been feeling guilty about all those frequent-flier points logged by the fish, not to mention all the controversies that surround farming. After all, we live in Ontario, a province famous for freshwater lakes, where there is plenty of excellent lake trout and whitefish smoked on our doorstep.
