Tasting Niagara's bounty: clingstones and freestones in candy floss and saffron

Hedonists, take note: There is no better place to be than a peach orchard in August. Last week, I drove out to the University of Guelph's experimental orchards in Vineland, in the Niagara Region, to sample some research. The station grows hundreds of varieties and crosses thousands of hybrids, all in the service of creating the best possible peaches.
