A toast to New Zealand bubbly

In my business, you hear this all the time from winemakers in the cool grape-growing regions outside France: "We are the next Burgundy."Not those words exactly, but that's what optimistic winemakers mean when they talk about how their crisp climate is ideally suited to growing pinot noir. Pinot is a berry blast of a grape that benefits from a spine of acidity that can develop only in a cool growing region. By cool, I'm talking about places such as Niagara, Oregon, Carneros in California, Tasmania in Australia and pretty much all of New Zealand.
