Not pretty, but rich in flavour

I've always thought of Jerusalem artichokes as a fall tuber, so I was surprised to encounter them last spring at Eigensinn Farm's annual Wild Leek Festival. They weren't growing in the maple forest (too shady), but guests were milling about with steaming bowls of silky Jerusalem artichoke soup, ladled out by Chris Klugman. The Summerhill Market chef had brought the tubers from California, and they were far less gnarled than usual.
