Celiac disease: an elusive 'iceberg'

Although as many as 300,000 Canadians suffer from celiac disease, many of them don't know it. Celiac disease, a lifelong, genetically based disorder, occurs when gluten - a protein found in wheat, rye and barley - triggers an abnormal immune response that damages the lining of the small intestine interfering with the absorption of nutrients. Often the condition goes undiagnosed. Experts commonly refer to it as an "iceberg" disease.
