Ingredients

2 bags mint tea

1 cup boiling water

1 cup sugar

1 teaspoon salt

2 ounces white cranberry juice

1-1/2 ounces spiced rum

1/2 ounce lime juice

Fresh cranberries and mint (for garnish)

Method

Steep 2 bags of mint tea in 1 cup of boiling water and cover. After steeping for 2 to 3 minutes, remove the tea bags and add 1 cup of white sugar and 1 teaspoon of salt. Lightly agitate the jar to help dissolve the sugar. Then uncover to allow the syrup to cool.

Fill a martini glass with ice and allow the glass to chill as the cocktail is prepared.

To make the cocktail, measure and add to a cocktail shaker: 1 ½ ounces spiced rum, 1 ounce of the prepared mint syrup, 2 ounces of white cranberry juice and the fresh squeezed juice of half a lime (about ½ ounce).

Fill the rest of the cocktail shaker with ice, close the shaker and hold firmly at both ends. Shaking hard and vigorously will not only chill the cocktail, but also aerate the liquid, giving it a light and effervescent texture. Discard the ice chilling the martini glass, and strain the fresh-shaken cocktail.

Garnish with speared fresh mint leaves and cranberries for a festive flair.
