Jamie Oliver: My favourite way to enjoy aubergines, or eggplants, is to put them on a barbecue or griddle pan, directly on the flame on the burner, or under the grill until the skins are burnt and blistered all over. Scoop out the soft, creamy, smoky flesh onto a board, then dress with lots of freshly chopped herbs, a little vinegar, good olive oil and a pinch of sea salt and black pepper. Serve with flatbreads for dipping – but it'll go with anything.
