Auditions for the second season of MasterChef Canada are coming up this summer. We asked returning MCC judge Claudio Aprile (of Toronto's Origin) for tips, tricks and his dream guest judge.

What are three tips you can offer aspiring MCC contestants?

Cook, cook and cook! Face all of your culinary fears before entering – if you've never baked, learn to bake. If you have never butchered a fish, go fishing; learn how to remove all those pin bones, because we're going to ask you.

What three elements must any good plate have visually?

Great colour and different levels on the plate, and aroma – it's not visual, but is usually overlooked.

Who's your dream guest judge for MCC?

Marco Pierre White.
