@EMMAMMEE: What can I do with leftover celery?

Jamie Oliver: I'm guessing you have raw leftovers, and you've probably got the heart or central lower part of the celery, which tends to be the bit most people chuck out – it's a real shame, as I think it's the most desirable part. My first instinct would be to really finely slice or shave it on a mandolin (use the guard), then dress it very simply in some extra virgin olive oil, a squeeze of lemon juice, sea salt and black pepper to taste, and some salty hard cheese like pecorino – it will be delicious. I also like to make a fresh celery and apple salsa using chopped fresh chili, a little oil and vinegar, and lots of chopped fresh mint leaves.
