Recipes: A non-traditional take on Indian cuisine

Cauliflower lentil soup with cauliflower fritters

Peter Power/The Globe and Mail

While this dinner doesn't follow traditional Indian recipes (one dish even features maple syrup), it simply bursts with flavour. This rich soup is wonderful before any main course, and the chicken has sweet, spicy overtones. For dessert, serve mangoes or a spiced fruit salad.
