Once you have the recipe down for this light and fresh sauce, you can add in any vegetable you like, or tofu or chicken.

1 400g package Shanghai-style noodles

1 tsp sesame oil

2 tbsp olive oil

1 tsp ginger,  freshly grated

1 clove garlic, grated

2 tsp brown sugar

2 tsp rice wine vinegar

Squeeze of fresh lime

1/4 teaspoon red pepper flakes

salt and pepper


In a small bowl, mix sesame oil, olive oil, ginger, garlic, brown sugar and rice wine vinegar. 

Add fresh lime.  Taste and adjust the flavours—you might want more tang from the lime or more garlic or some salt.

Add dry red pepper flakes if you’d like some spice.

Cook thick Shanghai-style noodles as per package directions.

Drain the noodles and toss immediately with the sauce.  Add any cooked vegetables you desire and serve.
