My husband and I wanted to visit Havana this year to see the city before the Americans arrived, but it was already too late to book accommodations. Frustrated, I threw myself into trying some interesting Cuban recipes over the spring break, hoping to create the illusion of being there. These recipes are adapted from originals from Eileen Andrade, the dynamic chef/owner of Finka restaurant in Miami, who recently visited Toronto.
