One of my main inspirations for the recipes I create is travelling. Recently, I toured through Nordic and Baltic countries to the opulent city of St. Petersburg, before flying back from Amsterdam. This very fine soup was motivated by an amuse I had at the art-inspired Andaz Prinsengracht hotel in Amsterdam. Local video art was incorporated all through the hotel even hanging from chandeliers, where you could watch the videos on TV screens. It was a spectacular showcase for the lively art scene in Amsterdam. The restaurant, Bluespoon, served beautifully plated food that had taste and flair. The chicken is inspired by a dish I had in the pretty city of Tallinn in Estonia at a restaurant that served contemporary Estonian food.
