Ingredients
1 head purple cabbage, shredded
1 onion, chopped or shredded
3 carrots, shredded
2 cups white sugar
1/2 cup white vinegar
1/2 cup apple cider vinegar
1/2 cup olive oil
1 teaspoon celery seed
1 teaspoon kosher salt
Method
Place vegetables in a large bowl. Toss with sugar.
In a medium saucepan, combine vinegars, oil, celery seed and salt. Bring to a boil and pour over cabbage. Toss till well-coated.
Cover and chill over night.
