My Scottish family frequently makes this easy dessert. Use a Scotch of your choice but blended works very well. If you have just made marmalade, this is a perfect way to use it. Buy a good quality Scottish shortbread for the best results. Save a few shortbread crumbs to sprinkle on top.

Ingredients

1 cup whipping cream

1/4 cup Scotch of choice

1/3 cup marmalade

1 tsp lemon juice

2 tbsp granulated sugar

8 Scottish shortbread cookies crushed (or 1 1/3 cup crumbled shortbread crumbs)

Freshly ground black pepper

Method

Whip cream until it holds soft peaks.

Stir Scotch, marmalade, lemon juice and sugar together in a small bowl.

Slowly add to cream while continuing to whip. Fold in shortbread crumbs.

Divide into glass dishes and top with a grind of black pepper.
