Chocolate Avocado PuddingTad Seaborn/The Globe and Mail

However cliché, a breakfast parfait can not only add variety to your breakfast routine, it's also a quick and attractive addition to your brunch table (or even your kids' snack time). Keeping it simple, I used my favourite maple-flavoured yogurt (buffalo milk) and added chocolate pudding – but a healthy option made from avocado. It's so smooth, creamy and rich that I bet you'd be hard-pressed to guess the secret ingredient without prior knowledge. Sweetened with maple syrup (or honey), it won't need a lot of sugar to feel like a treat. And of course, you can also serve the pudding on its own for a dessert – as a bonus it's 100-per-cent vegan friendly.

Maple-chocolate breakfast parfaits

2 peeled and pitted avocados

1 teaspoon vanilla

4 tablespoons unsweetened cocoa powder

5 tablespoons maple syrup (or honey)

2 tablespoons coconut milk (or almond or soy milk)

Method

1. Add 2 peeled and pitted avocados into a food processor (they need to be ripe). Then add 1 teaspoon vanilla, 4 tablespoons unsweetened cocoa powder, 5 tablespoons maple syrup (or honey) and 2 tablespoons coconut milk (or almond or soy milk).

2. Pulse to combine and then mix till you have a smooth, creamy pudding. You may need to scrape down the sides once or twice.

3. Combine with your favourite yogurt and fruit for a parfait or serve on its own as a dessert (adding crushed meringue or graham crumbs on top makes a nice textural addition).
