As we all know by now, quinoa packs a nutritional punch. But you don't have to reserve this nutty grain for lunch or dinner, here's a simple way to replace oatmeal for breakfast with a fragrant and easy quinoa option.

Ingredients

½ cup quinoa

1.5 cups water

1/8 teaspoon ginger

½ teaspoon cinnamon

¼ teaspoon nutmeg

½ teaspoon vanilla

¼ teaspoon honey

2 tbsp raisins

2 tbsp chopped pecans

¼ cup cubed apple

2 teaspoons cream

Method

In a fine sieve rinse ½ cup quinoa well and allow to drain.

Put the quinoa into a medium pot over medium heat and cook until the grains get toasted and start to smell fragrant.  Stir frequently.

Now add 1 ½ cups water (you can substitute coconut water or use half almond milk if you like).  Also add 1/8 teaspoon ginger, ½ teaspoon cinnamon, ¼ teaspoon nutmeg and ½ teaspoon vanilla.

Bring the mixture to a boil.  Simmer for about 20 minutes until most of the liquid is absorbed.  Stir often once it thickens to prevent burning on the bottom of the pot.

When the quinoa is  tender take it off the heat and stir in ¼- ½ teaspoon honey and add 2 tbsp raisins and 2 tbsp chopped pecans.

Top with ¼ cup cubed apple and 2 teaspoons of milk or cream. 

You can double the recipe and reheat with a little water or milk in the microwave if you want to plan ahead.  Add the apples (or other fruit) just before serving.
