Ingredients

1/4 maple sugar

2 tbsp maple syrup

2 tsp soy sauce

2 tbsp minced fresh ginger

13/4 lb suckling pork loi

4 bunches baby bok choy

2 shallots, minced

2 tsp butter

Method

In small bowl, whisk together maple sugar, maple syrup, soy sauce and ginger until glaze consistency is achieved.

Rub glaze onto pork loin and refrigerate overnight.

Preheat oven to 350F.

In hot roasting pan, on stove top, brown meat on all sides. Transfer to oven and roast 30 to 40 minutes, or until cooked to your liking.

Meanwhile, in small saucepan, over medium heat, heat leftover marinade until reduced to syrupy consistency.

To prepare boy choy: In large skillet, over medium heat, saute shallots in butter, about 1 minute. Meanwhile, blanch bok choy in boiling water. Drain and transfer immediately to skillet with shallots.

To serve: Slice pork loik into 1/2-inch slices and place over bok choy on platter. Drizzle sauce over top.

Serve with wild rice.
