My daughter created this recipe for Christmas dinner and everyone loved it. If you don't have small beets, roast the large ones and cut them up afterward.

Ingredients

2 pounds small beets

Salt and freshly ground pepper

2 tablespoons olive oil

1 bunch spinach, chard or kale, stemmed and shredded

1 teaspoon chopped garlic

1 tablespoon balsamic vinegar

1 cup diced goat cheese

Basil leaves

Method

Preheat oven to 400 F. Cut off any beet stems. Place in a baking dish with about ¼ cup water. Season with salt and pepper. Cover with foil and bake for about 45 minutes to 1 hour or until beets are tender. Cool.

Peel beets, cutting them in half or quarters, if needed. Heat oil in large skillet on medium-high heat. Add spinach and garlic and toss together until spinach wilts. Add beets , balsamic vinegar and mix together.

Sprinkle with goat cheese and torn basil. Toss together until cheese is melted.
