Ingredients

4 pounds purple potatoes, chopped in 1-inch cubes

3 tablespoons olive oil

5 strips fresh bacon

1 to 2 tablespoons maple syrup

One generous handful rosemary, chopped

Salt and pepper

Method

Preheat oven to 400 F. Chop potatoes, place on foil-lined baking tray and drizzle with olive oil.

Season with salt and pepper.

Roast until potatoes are golden and tender, about 20 to 25 minutes.

Cook bacon in large sauté pan until golden. Add maple syrup toward the end of cooking process.

Allow bacon to caramelize.

Remove from heat and let cool.

Remove potatoes and arrange on large platter. Chop bacon and rosemary.

Sprinkle over potatoes.
