Garlic scapes are the edible curly tops and seed pods of hard-necked garlic, which form in early summer. They have been around since man began cultivating garlic. They are milder than garlic and you can use then instead of garlic in any recipe. Look for them fresh in specialty food stores or farmers markets.
Servings: Serves 4 as an appetizer.
Ingredients
2 cups fresh spinach
½ cup chopped garlic scapes
¼ cup grated Parmesan cheese
¼ cup olive oil
2 tablespoons butter
Salt and freshly ground pepper
8 ounces spaghetti, cooked
Method
Toss with cooked pasta adding pasta water to thin if necessary. Substitute ½ cup green onions and 1 tablespoon chopped garlic if scapes are not available.
Place spinach, scapes and Parmesan in food processor. Pulse until mixture is chunky. With machine running pour in olive oil. Process until mixture is smooth. Add butter, salt and pepper. Toss with pasta and adjust seasoning.
