Stephen Alexander's tips on grilling the perfect sausage

Preheat grill to medium heat

Place sausage onto direct heat and cook 5 to 6 minutes per side.

Do not poke with fork for during cooking, this will cause sausage to lose juices.

Allow sausages to rest for 2 to three mins

Then check that juices run clear.
