The American Thanksgiving sandwich with roasted sweet potatoes and toasted marshmallows on Texas toast.Deborah Baic/The Globe and Mail

We got our fill of turkey, stuffing and relatives last month. How can we honour the American holiday? By taking the classic sweet potato and marshmallow casserole and turning it into a sandwich.

(Don't knock it till you try it, thank you very much.)

Ingredients

1 sweet potato

1 tsp brown sugar

salt

pepper

2 slices Texas toast

2 marshmallows

Method

Slice a small sweet potato in half and bake on a cookie sheet at 350 F for one hour or until tender. Scoop out the potato and mash with a teaspoon of brown sugar and salt and pepper (to taste).

Bring the sweet potato mash to work with two slices of Texas toast and two marshmallows. At lunch, toast the bread in the toaster oven. Spread one side with a thick layer of sweet potato. Slice the marshmallows into thin slices and layer on top. Put the marshmallow side back into the toaster oven to brown and melt the marshmallows. Top with second toast. Give sweet thanks.
