Satisfy blueberry cravings with this cocktail from Scarpetta in Toronto's Thompson Hotel

A handful of fresh blueberries

1 1/2 ounces Absolut Berri Açai vodka

1/2 ounce Limoncello liqueur

1/4 ounce simple syrup

1 ounce fresh lime juice

1/2 ounce club soda


Prepare the simple syrup required in advance by bringing two cups of water to a boil and then adding a cup of sugar, stirring constantly until the sugar is dissolved.

Once it is, remove the syrup from the heat source, cool, bottle and refrigerate for up to two weeks. When you're ready to make the cocktail, muddle the berries in a rocks glass with a quarter ounce of simple syrup.

Fill the glass with ice, add the remaining ingredients and stir gently. Garnish with a fresh basil leaf.
