Though the Chablis district of Burgundy is dominated by chardonnay, the small, little-known appellation of Saint-Bris excels at sauvignon blanc. As with fine Sancerre (the great sauvignon blanc source in the Loire Valley), this is a whispering white. Light-bodied, it hints at lemon, smoky herbs and flint.
